of this Special Reserve bottling. Look for jam and berry notes with well-integrated oak characteristics. Drink with sharp cheeses or medium-weight foods, like veal or salmon.

| The Alexander Valley Merlot was handpicked, destemmed, and crushed directly to fermentor and cold soaked for two days. It was inoculated with cultured yeast, fermented at 88ºF-92ºF and saw a gentle remontage twice daily. Malolactic fermentation completed in fermentor before racking to small (225L) French and American oak barrels with elevation 12 months in barrel. Bottled without fining or filtration.
Stored between 55º F - 60º F will age very well for between 5 and 7 years. Because the wine is unfined and unfiltered it may produce natural sediment as it ages. |
